- Whisk together eggs, green peas, olive oil or butter, salt and pepper in a bowl.
- Heat a 9" skillet over medium heat and add whisked mixture.
- Cook for about 2 minutes per side or until omelette is firm and cooked through. Serve immediately.

Directions: 1. In a mixing bowl, whisk together eggs and salt and pepper to taste. 2. In a separate sauté pan over medium heat, sauté onion until softened. Carefully fold one half of the omelette over onto itself, then slide it out of the pan and onto a plate. Serve hot!
